Why “Loco” Means More Than Crazy...
I started working in restaurants when I was just 14 years old.My first job was as a busboy
long hours, going to school full-time, and working full-time. But I fell in love with the rhythm
of the restaurant the teamwork, the smell of food, and the chaos that somehow makes sense
when you care enough to do it right.
As the years passed, I worked my way up cook, server, manager, leader. I learned how to run a restaurant from the inside out. And in 2015, I helped open a small place in Polk County, Tx with a few partners. I was the one who built it from the ground up the culture,
the people, the heartbeat of the business. I worked every shift, every holiday, every late night.
The restaurant became one of the most successful restaurants around and even now, it’s still growing strong. But behind that success, I realized something, I had built a dream that wasn’t fully mine. I was promised the chance to buy a larger partnership, but after I doubled the restaurant in size, I was denied that opportunity three times. When it came time for fairness and the promises that were made, they werenowhere to be found.
That’s when I decided to take the biggest risk of my life. I walked away from comfort from a restaurant everyone knew, loved, and called a success to start something of my own.
But I didn’t choose an easy road. I chose a location in Kingwood that had failed a couple of times a spot most people said was cursed. They told me I was crazy to leave something so good for something so uncertain. They said, “Why would you give up a sure thing?”
Because sometimes, there are decisions the heart understands, even when the mind doesn’t. That’s why I called it Loco Cantina. Because you have to be a little “loco” to walk away from comfort, to chase a vision when no one else sees it, and to believe in something that only exists in your heart.
There were no investors. No safety net. No guarantees. Just faith, hard work, and the belief that if we cooked with love, treated people like family, and never cut corners the community would feel it. Every light, every tile, every plate you see here tells a story of sacrifice, resilience, and belief. This isn’t just a restaurant it’s proof that dreams don’t fail; people just stop believing too soon.
So when you sit here, you’re not just having dinner you’re sitting inside a dream that almost didn’t happen. And if you’ve ever been told you can’t do something... let this place remind you that you can.
